4th Course: Nigiri Sushi meaning consists of an oblong mound of sushi rice that the chef presses into the palms of the hands, w/ a bit of wasabi, and a topping draped over it. Ebi is a sweet shrimp...my fav. I bought mine already premade at the Japanese market.

Ingredients for sushi rice

2 cups rice: You will need Japanese short-grained white rice. I used Calrose Botan rice.
1/4 cup Japanese rice vinegar add more to taste.
1 teaspoons salt use to taste.
1/4 cup sugar: Use plain white sugar to taste.

Seasoning the Sushi Rice: When the rice has finished cooking, add the vinegar seasoning mix to the rice. Turn the rice out of the pot or rice cooker and into a glass or wooden bowl. Cool down the rice and add the seasoning at the same time. I used a rice spoon or you can use a wooden spoon, in a gentle chopping motion to spread out the grains of rice and ensure the seasoning covers every grain.

Wait for the rice to cool, then scoop about a tablespoon of rice in your hand and mold it into a oblong shape just enough for the shrimp to fit on top. May sure you hands are wet because the rice will stick to your hands. Add wasabi on the of the rice and place the shrimp on top. You can also use salmon, tuna, egg, eel, octopus, etc. Where I am from (Guam), we used spam and a touch of nigori wrapped around. Enjoy!

This is actually more of a contribution of Joe’s, as he introduced me to this cookie and is the one who always makes them. They are a variation on a recipe found on New Hope Mills pancake mix and, in fact, use the buckwheat variety. New Hope Mills, a water-powered gristmill on the National Register of Historic Places, is located in Moravia, NY. Their products can be found fairly easily in the region (at Wegman’s, for example), but you can also visit the mill directly for tours and products. You can also order it online at Taste of CNY or even Amazon. But what about those cookies, you ask?

Joe’s New Hope Mills Chocolate Chip Cookies

In a mixer, cream
1/3 cup butter,
1 egg,
approx. 1/6 cup of lemon juice,
1/3 cup brown sugar,
1/3 cup white sugar.

Then add
1 1/2 cups New Hope Mills Buckwheat Pancake Mix (I cannot vouch for other buckwheat pancake mixes),
1/2 cup chocolate chips,
1/4 to 1/2 cup coconut (toasted or untoasted, your preference)
1/4 to 1/2 cup nuts (we have been using pecans and will be trying macadamias at some point).

Spoon out onto cookie sheets with wax paper/parchment/Silpat/etc. and bake for 12 minutes at 375°.

Shove by the fistful into your mouth while hot.

Lately, we haven’t been including the nuts, for no particular reason, and I think I actually prefer it that way as they get in the way of the hot gooeyness of the cookies. These are the only chocolate chip cookies that I can eat more than one of at a time, thanks to the slight tang of the buckwheat pancake mix that cuts through the goo.

The cookies picture above are actually “leftovers”. Joe usually makes a batch of dough and puts half in the fridge for later on. I’m sure it would freeze nicely as well (roll into balls first and freeze on a baking sheet, then put them in a bag). If you bake them right after making the dough, you’ll end up with a more flattened, chewy cookie, due to the warmer dough. The colder “leftover” dough tends to stay mounded up more, giving you a softer cookie middle, with a crisp outside. Both versions are excellent, therefore, you should always set some dough aside so you can have it both ways.

The dough is tasty as well… maybe eat half of your leftovers raw?

I'd send some to all of you, but there's that nagging time/mailing/customs issues. So I'll give you the recipe instead.

No, they're not low fat. Get over it. It's the holidays.

(hint - for making bar cookies like this, take a long piece of foil and line the pan with it, so that there's some overhang for handles. That way, when they're done, you can just lift them right out and slice them up. Just grease the foil like you usually would the pan)

Toffee Squares

3/4 cup unsalted butter, softened
3/4 cup packed brown sugar
1 egg yolk
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1 14 ounce can sweetened condensed milk
2 tablespoons butter
2 teaspoons vanilla
1 12 ounce package semisweet chocolate chips (2 cups)
1 cup almond brittle pieces or toasted chopped pecans

- Preheat oven to 350 F. Grease a 13x9x2 inch baking pan. Set aside.
- For the crust, in a large bowl, beat the 3/4 cup of butter and the brown sugar together with an electric mixer on medium speed until combined. Beat in egg yolk. Stir in flour and salt until well mixed. Using floured hands, press the dough into the bottom of the prepared pan. Baked in preheated over for about 20 minutes or until light brown. Cool on a wire rack.
- For the filling, stir sweetened condensed milk and the 2 tablespoons of butter in a heavy saucepan over medium heat until bubbly. Cook and stir 5 minutes more (mixture will thicken and become smooth) Stir in vanilla. Spread filling over the crust. Bake for 12 to 15 minutes more or until top layer is golden brown.
- Sprinkle baked layers evenly with the chocolate chips. Bake 1 to 2 minutes more or until chocolate chips begin to melt. Remove from oven, set on a wire rack. Using a flexible spatula or an offset spatula, spread the chocolate evenly over the baked layers. Sprinkle with almond brittle pieces or pecans. Cool completely on a wire rack. Cover and refrigerate until chocolate is set. Cut into bars.

(keeps in the fridge for up to 3 days covered - although trust me, they won't last that long! - or you can freeze for up to 3 months)

I've tended to be a stickler for tradition when it comes to pesto - basil or die - but this has changed my mind.

For four people you'd need:

* a butternut squash
* an aubergine
* 150g of parmesan
* a garlic clove
* a couple of handfuls of pine nuts
* olive oil

Pre-heat the oven to 200C and while it's heating up peal, take the seeds out of, and cube the butternut squash. Put it into a roasting tin and drizzle with olive oil. Put the tin into the oven and cook for about 10 minutes.

Prick the aubergine all over with a fork and rub olive oil into the skin. Add it to the squash and keep cooking for another 25 minutes.

Meanwhile grate the parmesan and put the water on to boil for the pasta. Cook the pasta when the water starts to boil.

When the veg are cooked (soft) put them in a food processor with the cheese, garlic and pine nuts. Whiz it up and when smooth start adding olive oil until the mixture has the consistency you want.

Add the pesto to the drained pasta and mix together.


You might also want to add a chilli to the pesto if you're that way inclined.

The butternut squash originate from around Mexico.
It is a good source of fiber, vitamin C, manganese, magnesium, and potassium. It is also an excellent source of vitamin A.
In Australia it is regarded as a pumpkin, and used interchangeably with other types of pumpkin.
A very common vegetable in South Africa, it makes a very tasty soup and can be cooked on a barbecue wrapped in foil with spices such as nutmeg and cinnamon.
Delicious meal alone or in a salad. I'll be making soup next time.
oven on 400-425 F/220C/
peel, cut in half, remove seed from butternut squash
cut into cubes
prepare mixture of olive oil/ about 1 tbs or so/ pressed garlic, salt, some pepper.
Pour the olive oil seasoning on squash, use your hands to mix it together.
Roast for about 20 minutes, until fork soft.
Truly delicious!
